Truffles are certainly not a common ingredient, available in abundance or cheaply: spontaneous specimens are in fact very rare and take years and years to grow. Specific soils are needed, characterized by a particular humidity and the presence of calcium, rich vegetation and a lot of patience to see the much coveted and precious products of the earth sprout.

In Italy, the richest areas in truffles are the woods of Langhe and Monferrato, where it is possible to participate in truffle hunting experiences, among paths and paths less traveled, let yourself be enchanted by the stories and legends about the product and also taste excellent truffle-based dishes paired with fine local wines. Perhaps the Italian region best known for the production and marketing of truffles, Piedmont is in fact home to different types, from the renowned white of Alba to the prized black, passing through many other varieties, such as scorzone, uncinato, moscato and brumale, less precious but equally inviting.

The white truffle of Alba is harvested from the first half of September in the Langhe and Monferrato, and is the most appreciated by connoisseurs thanks to its aromatic scent and unmistakable flavor. It is characterized by an irregular shape, a smooth and velvety texture to the touch, a cream color tending to pale ochre on the outside and a grayish yellow hue on the inside.

It is the protagonist of the International Alba White Truffle Fair – which this year will be held from 11 October to 8 December – one of the main showcases of haute cuisine and Italian excellence. The heart of the Fair is the World Market of the White Truffle of Alba, the ideal place to approach the theme and to buy truffles from the territories of Langhe, Monferrato and Roero; ample space is also dedicated to cooking shows held by great chefs of local and international cuisine, who will allow you to discover their secrets and taste their creations, rigorously combined with this precious product.

There will be no shortage of experiences, wine tastings, truffle sensory analysis workshops, meetings and debates with illustrious guests.
